Tomato Salad

Summer is making a quick comeback but to be honest, she always does around this time of the year. Just to remind you of her sweetness and keep you wanting her till next spring.

This end late summertime before autumn is my favourite time of the year, weather wise, produce wise and general mood wise. I could write a love letter to this time of the year many time over but instead I give you this gorgeous salad to see off tomato season in style.

Tomato Salad

  • Prep time: 30 mins
  • Cook time: 10 minutes
  • Serves 4

INGREDIENTS

  • ½ kg of tomato mix of choice ( cherry, heirloom, beef, vine etc..)
  • ½ red onion very finely chopped
  • 1 clove garlic
  • 1 tsp chilli flakes
  • 1 tsp cumin seeds
  • 1 tsp tomato puree
  • 1 Tbs olive oil ( a little extra for end drizzle)
  • salt and pepper to taste


method

  1. Cut the onions finely, rub with salt and set aside while preparing the rest of the salad (at least 30 mins) .
  2. Cut cup the tomatoes chunky or sliced as you please but they shouldn’t be cut finely.
  3. Heat olive oil a pan to warm it. Add the clove of garlic, chilli flakes, cumin seeds and tomato puree. Heat them all together on low heat to infuse the spices and warm the puree and oil. This will take about 10 minutes but make sure the heat is on the lowest setting.
  4. Wash and drain onion in cold water.
  5. Assemble the tomatoes on a plate, drizzle the infused tomatoes puree oil mix over, and season to taste.
  6. Best served immediately but can marinate in the oil for a few hours too.
